Some days you just want to keep things simple, but still have a dinner that is warm and satisfying, which is where this Cream Of Pea Soup comes in.
Not only is it super cheap, it tastes incredible, too! With just a packet of frozen peas, a few potatoes, some vegetable stock and some cream you can have a delightfully satiating dish that everyone in your family is going to love. Serve with crusty bread or as is, it’s really really good!
Method

In a heavy-based pan on a medium heat, add the butter and melt. Once melted, sauce the onion until soft and translucent, around 8 minutes.

To this sprinkle in the flour and cook, regular stirring, for several minutes. Then add in the diced potatoes and vegetable broth, and bring up to a simmer.

Continue to simmer until potatoes are tender, around 7-10 minutes.

Add the peas and simmer for an additional 2-3 minutes.

Cool soup slightly (to the specifications of your food processor) and then puree the soup. If you have an immersion blender, you can do this in the pot, otherwise divide into batches and puree.

Once pureed, add the soup back to the pot and stir through the cream and dill. Season as desired with salt and pepper, then serve.
