Coconut Cream balls make a great gift of food and are a delicious addition to the Christmas table. Best of all they freeze well! Made with coconut cream and white chocolate, they are a gourmet bite of deliciousness!
Method

In a medium saucepan, heat coconut cream and 3/4 cup of the coconut to a simmer.

Remove from heat and stir in chocolate then let sit for about 5 minutes.

Add butter and stir to combine.

Cover and refrigerate for at least 3 hours.

Roll the mixture into balls and coat with the remaining coconut.

Chill in the refrigerator for at least two to three hours before serving.
Recipe Hints and Tips:
- Coconut Cream Balls can be easily frozen. Make and layer balls between sheets of baking paper and seal in an air-tight container for up to three weeks.
- Store in the fridge covered in plastic wrap for up to a week.
- Place up to six balls in a small box lined with pretty paper for an amazing gift of food for Christmas.
