Christmas Fruit Mince – people either love it or hate it.
Either way it always makes it’s way to the Christmas table every year.
So here is a recipe for your own home made version. Has to be better than the shop bought ones!
Method
Combine sugar, marmalade, orange zest and juice, lemon zest and juice and Cointreau in a saucepan over medium heat.
Stir until sugar dissolves and mixture comes to the boil.
Add fruit and mix until well combined.
Reduce heat and cook for 8-10 minutes or until plump, stirring frequently.
Remove from heat and allow to cool.
Spoon into sterilised jars or use immediately in recipes.
Recipe Hints and Tips:
Christmas Fruit Mince is suitable for freezing.
Seal in a zip lock bag and freeze for up to four weeks.
