Chicken and Spinach Meatloaf is a yummy, easy, healthy dinner. This doesn’t have the guilt of traditional meatloaf, add a dollop of greek yoghurt, a garden salad and you have a delicious healthy meal for the family.
Method

Preheat oven 180 degrees.

Finely chop spinach, zest lemon, lightly beat eggs and place in large bowl.

Add chicken mince, breadcrumbs, pinenuts, feta, garlic and mayonnaise to bowl and mix together with your hands, yep messy but it really is the best way.

Line a baking tray with baking paper and place meatloaf mix in center. Mold into a log like shape smoothing with your hands.

Bake for 45 minutes, the outside will just start to brown.
