Cheesy Potato Puff is a delicious alternative to plain mashed potato! It makes a delicious simple dinner option.

Method
Butter a casserole dish or baking tray and sprinkle with breadcrumbs to lightly coat the sides and bottom.
In a large bowl, beat eggs well and mix with mashed potato and parsley and season to taste.
Spoon half the mixture into dish.
Top with cheese then place remaining potato on top.
Bake at 180 degrees for 1 hour. Serve hot.
Cheesy Potato Puff is not suitable for freezing.
For something different, try using sweet potatoes instead of normal potatoes.
