When you need a few budget meals to pad out your family’s weekly dinners, this Cheap ‘n’ Simple Butternut Pumpkin Chili is the perfect choice. It’s a super cheap meal that is ready in under an hour and is packed with delicious vegetables. It’s got a fantastic spicy flavour, and is guaranteed to be a hit.
Method
In a large pot, heat the olive oil and then add the onion, cooking until soft. Add the minced garlic, and cook for another minute or two.
Add the chopped pumpkin and celery, stirring to allow them to heat.
Add the rest of the ingredients into the pot and simmer for 30-40 minutes, until all the vegetables are tender and soft. If you're concerned about the chickpeas being too soft, add them later.
Serve warm with rice, bread or the grain of your choice.
