  • 125 g Butter
  • 1/2 cup Sugar, Caster
  • 2 Eggs
  • 1 cup Flour Self-Raising
  • 1 tsp Vanilla Extract
  • 3 tbsp Milk
  • 1/2 tsp Red Food Colouring
  • 1/2 tsp Blue Food Colouring
  • 1/2 tsp Green Food Colouring
  • 1/2 tsp Yellow Food Colouring

Rainbow Cupcakes

Rainbow Cupcakes look amazing! Kids love them not only because they taste incredible, but they are super eye-catching! Try them out…everyone will love making them AND eating them.

Method

  1. Preheat oven to 200 degrees C.

  2. Line a 12 hole cupcake tray with patty cups.

  3. Cream the sugar and butter until light and fluffy.

  4. Beat the eggs in one at a time adding a little flour in each time until the ingredients are mixed.

  5. Add the vanilla and mix.

  6. Add the milk 1 tablespoon at a time mixing after each addition.

  7. Divide the mixture into 6 bowls:

  8. In Bowl 1 - Add half a cap of red colouring

  9. In Bowl 2 - Add half a cap of red and half a cap of yellow

  10. In Bowl 3 - Add half a cap of yellow

  11. In Bowl 4 - Add half a cap of green

  12. In Bowl 5 - Add half a cap of blue

  13. In Bowl 6 - Add half a cap of blue and half a cap of red

  14. Mix colouring into each mixture after adding.

  15. Divide the purple mixture between the 12 cases.

  16. Repeat with the other mixtures in this order: Blue, Green, Yellow, Orange, Red.

  17. Bake in the preheated oven for 10-15 minutes.

  18. Rainbow Cupcakes are suitable to freeze for up to four weeks.

  19. For brighter colours, add a teaspoon of white vinegar to every coloured bowl.
