Buttermilk Irish Soda Bread

This Buttermilk Irish Soda Bread recipe is a snap to prepare but still tastes great — perfect for those who want bread in a rush!  It is a little like the traditional Damper recipe – but it has more flavour!

Method

  1. Preheat oven to 160 degrees C and grease a 12x23 centimetre loaf tin.

  2. In a large bowl, add together flour, baking powder, baking soda, salt and sugar in a large bowl. In a separate bowl, blend egg and buttermilk together and add all at once to the flour mixture. Mix just until moistened. Stir in butter. Pour batter into loaf tin.

  3. Bake for about 1 hour, or until a skewer inserted into the centre comes out clean. Let it cool on a rack for a few minutes and wrap in a clean tea towel for several hours, or overnight, for best flavour.

How to Make Buttermilk At Home:

If you don’t have buttermilk on hand (and let’s face it – who does??) – then it is simple to make it yourself at home.

What you will need is:

  • 1 cup full fat milk
  • 2 tablespoons lemon juice or white vinegar

Stir in the lemon juice or white vinegar into the cup of full fat milk.  Let is sit for 30 minutes at room temperature.  The milk will begin to curdle.  Stir well and use as directed.  You can keep buttermilk in the fridge for three days.
