Cook Bulgur according to package instructions or until fluffy. Set it aside to cool.

Prepare a large bowl and then chop the onion, cucumber, mint and parsley.

Place it inside the bowl. Add in a cup of garbanzo beans, then add the bulgur and pistachios.

Toss the contents of the bowl and then add feta cheese. Toss again and serve.
