Barbecued Pineapple with Hot Buttered Rum Sauce
I love really simple recipes… and nothing scream ‘Hot Weather’ like fresh pineapple. This is a great dessert to make on the barbecue, but if you don’t have one – just cook the pineapple pieces quickly in a really really hot frypan with a little bit of coconut oil.
So deliciously simple!
Method

Cut the skin off the pineapple, and cut it into long lengths.

Cook the pineapple on the barbecue over flames until the pieces start to caramelize and have blackened marks (but don't overcook)

Heat a frypan or small saucepan.

Melt the butter, add the brown sugar and rum.

Boil, stirring constantly until the mixture thickens and caramelizes (about 6 - 8 minutes)

Serve the barbecued pineapple pieces with the rum sauce.
