  • 100 g Wholemeal Self Raising Flour
  • 150 g Self Raising Flour
  • 1/2 tsp Baking Powder
  • 70 g Butter
  • 120 g Sugar
  • 2 Eggs lightly beaten
  • 2 Oranges
  • 1 cup Low Fat Yoghurt

Low Fat Orange and Yoghurt Cakes

These low fat orange and yoghurt cakes are scrumptious when eaten warm and low fat so you don’t have to feel guilty about enjoying them. In fact I think I will have two.

 

 

Method

  1. Preheat oven to 160 degrees.

  2. Combine flours and baking powder in a bowl.

  3. Beat the butter and sugar using an electric mixer until creamy.

  4. Puree the oranges in a food processor.Add eggs and gently combine.

  5. Slowly add the orange mixture to the sugar and butter mixture then beat for 2 minutes.

  6. Here is the tricky bit, add 1/3 of the flour to this mixture while mixing on low. Then add 1/2 the yoghurt while mixing on medium, next add 1/2 of the remaining flour while mixing on low again.

  7. Then add the remainder of the yogurt and mix on high.

  8. Add the remainder of the flour and mix on low until combined.

  9. Spoon into cupcake or muffin cases.

  10. Bake at 180 for 15 minutes or until lightly golden.

  11. Low Fat Orange and Yoghurt Cakes suitable to freeze

  12. You can serve hot with low fat ice cream for dessert.
