I love recipes that require the least amount of washing up. So Bacon and Zucchini Pasta is terrific. One pot for pasta and one frying pan. That means a fast washing up and get to the lounge chair with.
Method
In a frying pan, cook the bacon until crispy.
Set on paper towel to drain. In the same pan remove the most of the bacon fat.
Add the zucchini and cook until tender.
Add the pasta and the cream, stock, and basil and let it simmer for 8 minutes until the sauce has reduced and thickened.
Serve with grated cheese on top
Bacon and zucchini pasta is not suitable for freezing. Is best made fresh before serving.
