Frugal Bacon and Veggie Slice
Oh nothing better than a piece of Bacon and Veggie slice for lunch, this is an easy to cook recipe that is tasty and filling for the family. You can also cook it a bit longer – cut it into wedges and serve it for morning tea with a slab of butter.
It can be frozen so you have some on hand at all times – and is also good for school lunches! A very versatile recipe!
Method

Preheat oven to 180 degrees.

Whisk eggs cream, seasoning, tomato paste and cream together.

Add self raising flour mix then add all veggies, mix with wooden spoon until well combined.

Line a rectangular baking dish with the diced bacon in a thick layer, pour egg and veggie mix on top.

Place into oven.

Bake for 40 minutes until golden brown.
Recipe Hints and Tips:
- Bacon and Veggie Slice is suitable for freezing for up to 4 months or keep an airtight container for up to 3 days in the fridge.
- You can leave out the bacon to make this dish vegetarian.
