Authentic Balinese Chicken Satay Skewers
There are two steps to making an authentic Balinese chicken satay. The first is the spice mix for marinating the chicken in and the second is the peanut sauce.
I learnt this recipe on a day trip to Canguu in Bail while earthquakes were overflowing the pool as we cooked and if I ever want to impress then this classic Balinese Street Food is something I pull out. Especially if the girls I travelled with come for dinner!
Method
Combine all marinade ingredients in a bowl and add the chicken marinate for at least an hour or overnight
Soak skewers in water so they don't burn.
Thread chicken pieces onto the skewers
Preheat a grill pan over medium-high heat and grill skewers until just cooked through
Drizzle over peanut sauce and serve the rest in dipping bowls. Garnish with chopped peanuts, coriander and fried shallots.
Combine all ingredients in a medium-sized saucepan over low heat and cook stirring until the peanut butter loosens into a thick sauce consistency. Add more water or oil if it looks too thick.
