These Apricot Balls are easy to make, delicious and a time honoured Christmas Tradition in my family. But they taste just as good any time of the year. lol

This one is a lot less naughty and you can enjoy eating with less guilt. They make fabulous lunch box fillers or after school snacks. The kids love it! Whip some up and let us know what you think. I’m sure you’ll love it as well.
Method

In a bowl combine all the ingredients.

Using a teaspoon full of mixture, roll a tight ball and then roll in the extra coconut.

Place on a plate and refrigerate the apricot balls for a couple of hours.

Recipe Hints and Tips:
- Apricot Balls are suitable to freeze for up to four weeks.
- Layer between baking paper sheets and freeze in an airtight container.
