  • 50 g Rice Bubbles
  • 50 g Dried Apricots chopped
  • 30 g LSA (optional)
  • 100 g Butter
  • 85 g Golden Syrup
  • 75 g White Chocolate

Apricot and White Chocolate Cereal Bars

Apricot and White Chocolate Cereal Bars are great for kids lunch boxes and even though they contain chocolate there are a lot of great healthy ingredients packed into these little balls for lots of energy for growing muscles.

Method

  1. Combine the dry ingredients in a large bowl.

  2. Combine the butter, golden syrup and white chocolate in a saucepan over low heat, mix well.

  3. Add the wet mixture to the dry ingredients and gently combined.

  4. Press firmly into a greased or lined slice tin.

  5. Refrigerate until set then cut into bars.

  6. Alternatively, roll the Apricot and White Chocolate Cereal Bars into bite sized balls and refrigerate.

  • Apricot and White Chocolate Cereal Bars store in the fridge in an airtight container for up to 1 week..
  • Makes about 16 Bars or 32 balls.
  • LSA is Linseed, Sunflower and Almond Meal and is available from most supermarkets and health food stores.  It is delicious on cereal and in baking.
