31. Spiced Mango Chia Pudding

Chia pudding recipes are popular, but this is the first mango version we’ve seen with the fruit whirled right in, rather than pureed and layered, and warm spices added for a flavour boost. By ingredients, this recipe is dairy-free / non-dairy, egg-free, gluten-free, grain-free, peanut-free, soy-free, optionally vegan / plant-based, and vegetarian.

32. Mango Cream Tart with Coconut Crust

If you may have to deal with unripe, stringy, tough and tasteless mangoes. I would rather giving up using mangoes. The perfect solution is canned mango pulp that you can easily buy from Indian grocery stores. It’s superior in flavour, texture and sweetness. So good that you would be so tempted to drink it straight from the can.

34. Mango and Turmeric Raw Cupcakes

The recipe is pretty much straight forward, the crust is a mix of almonds, sunflower seeds and medjool dates. The mango and turmeric filling is a mix of mango, fresh turmeric, fresh ginger, lime and creamed coconut and it’s absolutely divine. You could use some dried marigolds for the decoration, you could also use some fresh mango, flaked coconut or edible flowers of your choice. If your mango is very sweet you can omit the maple syrup if you like as it’ll be sweet enough.

It’s a pretty flexible recipe. If your mangoes are as sweet as you’d like them to be you could add a little honey while you puree them. If you wanted to get really crazy you could melt butter into the graham cracker crumbs to form a more traditional “crust.”
