  • Traditional Christmas Glaze
  • 1 Lemon juiced and zested
  • 2 tbsp Dijon Mustard
  • 50 ml White Wine
  • 2 Garlic Cloves
  • 3 tbsp Brown Sugar
  • Apricot Jam Glaze
  • 500 g Apricot Jam
  • 1/2 cup Brown Sugar
  • 1.5 cups Sherry
  • 1 tbsp Wholegrain Mustard
  • 3 Garlic Cloves

Here is a couple of wonderful Christmas Ham Glazes to make that Christmas ham even more special!

Method

  1. Preheat oven to 180 degrees.

  2. Mix the zest and juice of a lemon with the  mustard and the brown sugar.

  3. Carefully peel the skin off the ham and score the fat into diamonds, and stud each diamond with a clove.

  4. Pour a little white wine into a baking dish, put the ham in the dish, rub in the glaze.

  5. Bake for 20 minutes until the ham looks rich and shiny.

  6. In a small bowl mix the jam with the sherry.

  7. Heat gently in the microwave until it becomes tacky.

  8. Carefully peel the skin off the ham and score the fat into diamonds, and stud each diamond with a clove.

  9. Using half the apricot mix rub in the glaze.

  10. Press the brown sugar into the ham over the top of the glaze.

  11. Add 3 cups of water to the baking dish and cook for one hour at 200 degrees - and baste the ham with some of the remaining glaze.

  12. Before serving, add the mustard to the remaining glaze and heat in the microwave, and spoon glaze over the sliced meat.

Recipe Hints and Tips:

  • Christmas Ham Glazes are not suitable to freeze.
