This is quite a schmancy cut of pork for a special occasion. Your taste buds will thank you for the delicious flavours that will engulf them.
Method

Pour tomato and Worcestershire sauce, brown sugar and curry powder in a large container, mix together.

Sit pork in marinate leaving cracking dry, now pat skin dry with paper towel & sprinkle with salt.

Allow to marinate and skin dry in fridge for 2-3 hours.

Preheat oven to 220 degrees C.

Heat heavy baking dish in oven with 2 tablespoons oil, when oven has come up to temperature place pork skin side down, baste with maple syrup and cook for 6-8 minutes.

Then reduce oven to 180 degrees and turn over, cook for a further 35-40 minutes.

If wanting cracking to be a little crunchier you can cut it off & cook separately at 220 degrees C for a further 10 minutes.
