  • 2 cups Leftover Salad Or Coleslaw
  • 1 cup Ham diced
  • 4 tbsp Sour Light Cream
  • 1.5 cups Cheese grated
  • 4 tsp Sweet Chilli Sauce

Method

  1. Preheat oven to 160 degrees.

  2. Pour 4 cups salted water in large saucepan, spike potatoes with a fork all over to prevent splitting. Add potatoes to pot and bring water to the boil, rapidly boiling for 10 minutes.

  3. Drain and place each potato in a serving bowl, cut into quarters. Top with coleslaw,  ham, sour cream, grated cheese and sweet chilli sauce.

  4. Place into oven at 160 oC for 10-15 minutes until melted or microwave on high for 1 minute 30 seconds until cheese melts.

Recipe Hints and Tips:

  • Christmas Spuds are not suitable for freezing.
  • You can use any salad you have leftover from garden to rice salads & it doesn't matter if they are alittle soggy.
