Nothing says baking like a batch of homemade strawberry jam! And it couldn’t be easier to make. You’ll just need a heavy-based saucepan, 1000 grams of hulled strawberries, 4 cups of caster sugar, and 4 tablespoons of lemon juice. Start by crushing the strawberries in the saucepan, then add the sugar and lemon juice.
Heat over low heat until all the sugar has dissolved, then increase to high heat to bring them to a full rolling boil, often stirring until it reaches 105C on the thermometer. Finally, transfer your delicious jam into hot sterile jars, leaving 1cm headspace before sealing them. If you want to store the jam for future eating, then process any unsealed jars in a water bath. Otherwise, just pop them straight into the fridge and enjoy them soon after making them!

Method

In a heavy based saucepan crush the strawberries with a potato masher.

Add sugar and lemon juice.

Stir over low heat until the sugar is dissolved.

Increase heat to high, and bring the mixture to a full rolling boil.

Boil, stirring often, until the mixture reaches 105 C.

Transfer to hot sterile jars, leaving 1cm headspace, and seal.

Process any unsealed jars in a water bath. If the jam is going to be eaten right away, don't bother with processing, and just refrigerate.
