Ingredients

  • 1 cup Pearl Barley
  • 1/2 Capsicum diced
  • 250 g Cherry Tomatoes quartered
  • 6 Shallots
  • 1/2 cup Currants
  • 1 Orange
  • 100 g Cheese (feta) diced
  • 1 Bag Of Seed Mix (sunflower pepitasetc, pine nuts etc)
  • 1/2 cup Parsley chopped
  • Dressing
  • 1/2 cup Sunflower Oil
  • 4 tbsp Soy Sauce
  • 2 tbsp Lemon Juice & Lemon Zest
  • 2 Garlic Cloves crushed

Mediterranean Barley Salad. When you want something different for a healthy salad try this savoury, saucy summer salad! Great for BBQ’s … It really is Nom nom nom.

Method

  1. Overnight: soak the barley in water & the currants in orange juice.

  2. Boil barley for 20mins in salted water.

  3. When barley is cool combine all ingredients in large bowl, gently toss until all mixed through evenly.

  4. To make your dressing, place all dressing ingredients in small bowl or jug & mix well.

  5. Pour over salad just prior to serving.

Recipe Hints and Tips:

  • Mediterranean Barley Salad is not suitable to freeze.
  • You can substitute the currents for cranberries.
