This is one of my favorite breakfast foods, but I don’t always treat myself to it when I feel the need. To be honest, I seldom have an hour to spare to whip one up and I’m not usually that good at planning that far in advance!
But thanks to this Coffee Cup Quiche recipe, which is not only fast and simple but also nutritious and delectable. Plus, I can finally enjoy my quiche without feeling guilty!

Method

Beat egg and milk together with a fork, adding salt and pepper to taste.

Tear bread into small pieces and add to egg mix with cream cheese and ham or sausages.

Sprinkle with thyme.

Microwave for approximately 1 minute 30 seconds, but increase or decrease this depending on how solid you like your quiche.

Top with chopped green onions.
Recipe Hints and Tips:
- Coffee Cup Quiche is not suitable to freeze.
- Best served straight out of the microwave.
