Sweet Potatoes are not only totally delicious – they are cheap and filling and so good for you! This is a fantastic family-friendly meal that uses loads of leftovers. Perfect for a Monday night when you have had a roast chicken and vegetables the night before.
If you don’t have leftover sweet potatoes – they are super easy to make. Just preheat your oven to 180, place them whole on a baking tray, pierce with a fork and drizzle with a little oil and bake for 60 minutes.

Method

Preheat the oven to 180 degrees. Line a large baking tray with baking paper and set it aside.

Cut the top off each of the sweet potatoes and scoop out 3/4 of the sweet potato flesh. Place it in a bowl.

Chop up the leftover barbecue chicken. Mix it in the bowl with the sour cream and the sweet potato flesh.

Scoop the mixture back into the sweet potatoes and top with the grated cheese.

Bake for 20 minutes or until golden and bubbly.

Serve hot with a bread roll and salad.
