Roast Lamb Sliders are so great when you have leftover toasted lamb!
Every year Christmas comes around and every year I say I am not going to cook too much food this year! But of course every year I still cook too much food!
So, this year I wizened up a little and planned my Boxing Day lunch around our Xmas day lunch!
Slow Roasted Lamb is always on the menu because my parents love it! But there is always so much leftover God forbid me to buy a small one, what if unexpected guests turn up! So for Boxing day lunch, this year sliders are on the menu!
Method

Place the lamb in a microwave-safe bowl, cover with glad wrap and reheat until hot.

Place a layer of parsley on the bottom of the slider then top with lamb, pepper and tzatziki

If parsley isn't your idea ad a slider switch it out for baby spinach, rocket or lettuce.

Pick something with a little crunch though, the texture makes all the difference!
If really want to impress give THESE BUTTER BUNS ago, you can eat them with lunch or dinner Xmas day then stash a bunch in the fridge for boxing day.
If you do make these buns 45 grams is a great size slider if you want to measure the weight so they’re all the same size.
