One of our fabulous Stay at Home Mum’s in the office was searching for a simple recipe for Simple Curried Sausages that she could whip up in a minute with easy ingredients and that would be eaten just as quick.
One call to her mum to ask for for the best way to make curried sausages and she gave us her recipe. It is super simple, frugal and delicious Simple Curried Sausages recipe that is sure to be a family favourite. It tastes so comforting and satisfying!
Yes I Boil the Sausages First…
My Mum taught me this and it really works to make the best curried sausages. Half fill a frying pan with water, bring it to the boil and pop the sausages (whole) in the water and boil them for about five minutes. Then remove them with tongs. This makes the sausage skin really easy to remove, and you can easily just chop up the sausages because they are par-cooked.
Look you don’t HAVE to do this – it is an added step – but it does make for a better end result.
A Hint about Choosing the Right Sausage:
We always use Honey Sausages in any of our recipes. Sure, they aren’t as healthy as the traditional types of sausage, but they are so yummy and if that’s what it takes to get my kids to eat dinner – so be it. You can even freeze it and reheat it later on.
Method

You don't need to cook the sausages beforehand, its entirely up to you, I cooked mine in a saucepan for 5 minutes just to seal the meat and to remove the skins and then chopped into 5cm pieces.

Pop into a large saucepan with chopped brown onion and cover with water.

Add enough curry powder to taste (I used 2 Tbsp.) and leave to simmer until your sausages are cooked through.

Add enough water to your cornflour in a cup to make a smooth paste and add to curry.

Turn up the heat and the sauce will thicken.

Simple Curried Sausages are suitable to freeze for up to two months.

You can add fruit, such as sultanas and apples, if you like your curry with a fruity kick.

Carrots and/or peas also bulk up this meal and add to your daily vegie intake.

This recipe can be made in the slowcooker, just add uncooked sausages and cut up mid-way through cooking. Takes about 4 hours on low.

For a coconut curry flavour, replace the water with a tin of coconut cream!
