We’ve mastered the art of making really good impossible pies and this Sweet Potato Impossible Pie is one of them!
I have a real love for Impossible Pies mainly because they are so easy, and it really is impossible to stuff them up. This one uses grated sweet potato, which is a fantastic ingredient as it is so good for you. When you cook it together with the flour, zucchini, cheese and eggs, the grated sweet potato gently ‘melts’ into the mix, making it somewhat like a light ‘mash’ mix.
Once cooked, it forms a type of loaf that can be cut into slices.
It doesn’t need butter or even a side salad – it is delicious on its own!
Method

Place all of the ingredients into a bowl and mix well.

Put the mix in a lightly greased pan or baking dish.

Bake for 50 minutes at 200 degrees.
