Sometimes, when our meals get a little boring, I like to squeeze in some of my favourite mexican recipes just to spice things up.
I adore Mexican food. What’s not to love? It’s probably one of the most flavourful and appetising out of all the foods in the world. It’s also really popular that it’s a staple in some households here in Australia.
Anyway, these are seven of my most favourite Mexican recipes. I love it for the taste and for how easy it is to make. The fact that I can find all the ingredients I need at Woolworths is a huge plus!
1. Pork Cantinas Tacos
Pork Cantinas are so easy to make. If you like it extra spicy, add extra jalapeños or a pinch of cayenne pepper. If you prefer it to be more family friendly leave out the jalapeños.
Ingredients:
2kg Woolworths Boneless Pork Shoulder Roast
1 tbsp Woolworths Oregano Leaves
2 tsps Woolworths Cumin Ground
1 tbsp Macro Organic Extra Virgin Spanish Olive Oil
2 Oranges Juiced
2 tbsps Garlic (minced)
2 tbsps Jalapenos (chopped)
1 Brown Onion (chopped roughly)
1 tsp Woolworths Cracked Black Pepper
4 Woolworths Burrito Tortillas
1/2 cup Woolworths Taco Sauce

2. Warming Mexican Beef Chilli
This one’s perfect for autumn and winter. Warming Mexican Beef Chilli is packed with protein and is extremely flavourful!
Ingredients:
500 grams Woolworths Msa Beef Rump Steak
2 Capsicum cut into sticks, colour your choice
2 tbsps Woolworths Tomato Paste Sachet
1 can of 400 grams Woolworths Whole Peeled Italian Tomatoes (roughly chopped)
400 grams Macro Organic Beans Red Kidney (rinsed and drained)
1/2 cup Woolworths Coriander Leaves chopped
1 Lime zested, cut into wedges
1 Onion large
2 tbsps Garlic (minced)
1 tsp Chili Powder
2 tsps Woolworths Cumin Ground
2 tbsps Olive Oil
1 Bay Leaf
2 tbsps Woolworths Plain Flour

3. Mexican Double Baked Loaded Potatoes
There are so many reasons why I love this recipe. It’s crispy on the outside, gooey on the inside and flavours are just sooo overwhelming. Best of all, this recipe is super versatile that you can use almost any leftover meat you have and you the cheese level can go from slightly-cheesy to swimming-in-cheese-atm.
You can make this varied by adding almost anything else to the filling on these, so go wild!
4 Potato (baking variety)
1 large Onion (diced)
1 and 1/2 tsp Garlic (minced
1/2 cup Sour Cream
1 cup Cheese (Grated)
2 tbsp Olive Oil
6 Bacon Rashes (diced)
1 tsp salt and black pepper (to taste)
4 spoonfuls of Woolworths Chunky Salsa

4. Slow Cooker Mexican Chicken Soup
This one’s a winter favourite of mine. This Chicken soup makes cold nights feel warm and cosy!
Ingredients:
2 Woolworths Chicken Breast Fillet
1 Clove Garlic
1 Brown Onion finely chopped
400 grams Woolworths Red Kidney Beans (rinsed and drained)
400 grams Woolworths Diced Italian Tomatoes (diced)
1 cup Woolworths Australian Corn Kernels
300 grams Woolworths Salsa (Mild or Medium)
2 cups Chicken Stock
1/4 cup Woolworths Taco Seasoning Mix
1 small Chopped Avocado, Sour Cream, And Corn Chips (to serve)

5. Slow Cooker Shredded Mexican Beef
This comes out super delicious and tender. It’s the best eaten with tacos. But it’s also yummy when paired with rice, burritos, nachos and quesadillas!
Ingredients:
1 kg Woolworths Simply Roast Beef Marinated
1 tbsp Woolworths Canola Oil
4 Cloves Garlic
1 Onion
1/2 tbsp Woolworths Tomato Paste Sachet
3/4 cup Woolworths Beef Liquid Stock
1/2 tsp Parsley
2 tsps Chilli Powder
1 and 1/2 tsp Cumin
1/2 tsp Woolworths Cayenne Pepper
1/2 tsp Woolworths Paprika Ground
1/2 tsp Oregano
1 Woolworths Red Kidney Beans
4 Woolworths Taco Shells

6. Homemade Fajitas
This probably my go-to when I’m starving and would like to eat everything in my bowl. It’s a perfect all-in-one meal. The meat, veggies and spices just makes it all the more appetising!
Ingredients:
1 tsp Woolworths Paprika Ground
1 tsp Cumin
1/4 tsp Woolworths Garlic Powder
1 tsp Salt
1 tsp Pepper
1 tsp Chilli Powder
3 tbsps Olive Oil
1 Red Onion (sliced)
1 Red Capsicum
1 Lime (juiced)
1/2 tsp Woolworths Cayenne Pepper
500 grams Macro Free Range Chicken Stir Fry

7. Mexican Fried Rice
Mexican fried rice is the winner in the fried rice category for me. It’s probably because it’s the most filling and the flavours of all the ingredients just mix super duper well!
Ingredients:
2 tbsps Olive Oil
3 and 1/2 tsps Garlic (minced)
2 tsps Chili Powder
1 and 1/2 tsp Woolworths Cumin Ground
1 tsp Woolworths Paprika Smoked
1/2 tsp Oregano
1 Onion (diced)
1 large Red Capsicum
2 cups Woolworths Brown Rice Grain (cooked)
600 grams Black Beans about two cans (drained and rinsed)
1/2 cup Coriander (chopped)
1 Cup Woolworths Corn Sweet Kernels
