Madeira Cakehas been around since time began nearly. A good cake to keep in freezer for when unexpected people arrive for morning tea!
Method
Preheat oven to 160 degrees.
Prepare the cake tin by rubbing butter all over and then flour a deep 18cm round cake tin, shaking out any excess.
Beat the butter and sugar with until pale and creamy.
Add the eggs gradually, beating well after each addition.
Fold in the flour, lemon zest and juice until combined.
When smooth, spoon into the prepared tin and level the surface.
Sprinkle the extra caster sugar over the top.
Bake for 1 hour, or until a knife comes out clean when inserted into the centre of the cake.
Allow to cool for 15 minutes in the tin before turning out onto a wire rack.
To serve, dust with icing sugar and garnish with lemon zest.
