Frugal Bruschetta is a delicious start to any meal.

It can also save you money, too! By filling up hungry tummies just before the main meal.

Method

  1. Line up the slices of bread on a baking tray and toast very lightly on one side under the grill.

  2. Turn over the bread.

  3. Mix together the garlic and olive oil and lightly brush the top side of the bread with the mix.

  4. Place back under the grill and again very lightly toast the remaining side.

  5. Remove from the grill and allow to cool.

  6. Add the finely chopped red onion and shallot.  Chop the tomatoes roughly and mix together in a bowl.  Splash with the balsamic vinegar (only enough to just 'dampen' the mix) and place a heaped tablespoon on each piece of toast.

  7. Serve immediately.

Recipe Hints and Tips:

  • Frugal Bruschetta is not suitable for freezing and best served immediately.

And if tomatoes are in season, then this truly is a frugal starter – and delicious and refreshing too! I like to use sourdough bread for frugal bruschetta, but I usually buy it at the end of the day when it is on sale. As you will be toasting it anyway, it doesn’t matter if it isn’t super fresh

More Recipes:

Bruschetta is a classic Italian appetizer that has been enjoyed for centuries. It consists of toasted bread, rubbed with garlic, and topped with olive oil, salt, and pepper. Tomatoes are then layered on top, along with a variety of other toppings such as olives, capers, herbs, cheese, and cured meats.

The dish originated in the 15th century in Italy. Local peasants would take the leftover bread from their day’s meal and make bruschetta by toasting the slices over an open fire before adding garlic and oil to them. The tomatoes were added later as they became available. This dish quickly gained popularity throughout Italy and remains a beloved appetizer to this day.

When it comes to making bruschetta at home today, there are endless variations on how it can be prepared. For example, some people like to use different types of bread such as ciabatta or sourdough rather than traditional Italian bread slices. Additionally, different toppings can be used depending on individual tastes including artichoke hearts, roasted red peppers, mushrooms, or onions. And for an extra kick of flavor balsamic vinegar or pesto can also be added.
