Satay Chicken Sticks are surprisingly easy to make and are great for an entrée or party nibbles. Best of all, this recipe only has 6 ingredients!
You will need approximately 20 bamboo skewers for this recipe.
Method

Thread chicken onto skewers and place in an ovenproof dish or tray.

Whisk the peanut butter, stock, soy sauce and lemon juice together.

Spoon 1/2 the peanut sauce over the skewers and turn the skewers to coat the chicken with the sauce.

Cover with plastic wrap and place in the fridge marinate. Overnight is best, but if you're in a rush a few hours will do.

Place remaining peanut sauce in a small saucepan and bring to the boil over high heat.

Simmer, uncovered, stirring, for 1 minute or until the sauce thickens slightly.

Place in a small bowl, cover and refrigerate until you've finished your marinating.

Heat the oil in a large non-stick frying pan over medium-high heat.

Add 1/2 the chicken skewers and cook for 3-4 minutes each side or until light golden and cooked through, then cook the other half.

Serve accompanied by the peanut sauce.

Satay Chicken Sticks are suitable to freeze for up to six months.

To avoid your satay sticks splintering when you thread the chicken, or burning on a hotplate, soak them for up to 30 minutes prior to using.
