We love a sweet treat, particularly when it comes in the form of these Lemon Almond Ricotta Bars. Such a super delicious cake bar with the creamy flavour of ricotta and almond, along with tangy lemon! You can bake these in a baking pan, or in a cake pan, depending on what you have on hand.
Method
Grease either a baking dish or a 20cm round cake pan and line with baking paper. Preheat oven to 160 degrees.
In a large bowl add the ricotta, lemon zest, eggs, sugar and almond meal.
Beat using a spoon or electric mixer until well combined.
Pour into your pan and smooth the top. Sprinkle the chopped almonds over the top.
Bake for 50-60 minutes, or until a skewer inserted int the middle emerges clean. Be careful not to over bake.
Dust with icing sugar prior to serving.
