Summer dinners under the stars just come together with a dish like these Pork Chops With Nectarine Relish. The pork has a super simple spicy rub, and the relish is just to die for. Don’t be surprised if people come looking for this recipe, it’s just that good.
Method
In a small bowl, combine the chilli powder, ground coriander and cumin, paprika and salt and pepper. Rub on both sides of the pork chops.
In a non-stick pan, add the olive oil. When warm, cook the pork chops on a medium-high heat for 5-7 minutes on each side, or until juices from meat runs clear. Set aside and keep warm.
In the same skillet, mix the salsa and the jam. Bring this mixture to a boil, and then reduce heat and stir for a minute or two. Add in the diced nectarines and the cilantro and cook until soft, around 10-15 minutes. Serve with the pork.
