Sweet and tart raspberries mixed the refreshing mint, zesty lime, and a bit of white rum, it’s a fantastic drink all year around. We love it with fresh raspberries, but you’re more than welcome to use frozen ones if that’s what you have on hand.
Make these Raspberry Mojitos in bulk if you’ve got a few people over, and it’s a guaranteed crowd-pleaser!
Method

In a small pan add the raspberries, water, sugar and salt. Cook for 3-5 minutes, stirring, until thickened. Pop in a blender and pulse until smooth. For a very smooth mix you can strain out the seeds, but we didn't. You should end up with about 1.5-2 cups of raspberry puree.

Prepare 2 drinking glasses (heavy bottom is best). In them divide the mint and lime evenly. Use a muddler to smash them and release the flavours. Add the ice cubes and about 1/4 cup raspberry puree to each glass.

On top of this pour half of each the white rum and soda water. Stir to combine and serve straight away.
