  • 100 g Lindt Dark Chocolate Mint Intense
  • 3/4 Plain Flour

  • 3/4 Brown Sugar

  • 1 tsp Mint Extract to taste
  • 2 tsp Water
  • 1/4 cup Mint Leaves

There’s something about mint chocolate that just makes us drool, which is why we love these Minty Chocolate Brownies.

Unlike many other recipes that contain layers of mint cream, these Minty Chocolate Brownies are fudge-tastic chocolate with a subtly satisfying mint flavour.

Now, don’t skimp on your extracts for this recipe! You’ll get a much better flavour with a proper mint extract, instead of an imitation one.

Method

  1. Preheat oven to 160 degrees.

  2. Using either the microwave method, or a heat-proof bowl over some boiling water, melt the cooking chocolate and the Lindt mint chocolate. Break up the chocolates into small pieces, and stir until completely melted.

  3. In a medium bowl, sift the flour, baking soda and salt. Stir until combined.

  4. In another bowl, add the eggs, sugar and butter, mixing for a few minutes. Then add the water and the mint extract. Add this wet mixture to the dry mixture, and stir along with the melted chocolate until everything is combined.

  5. Pour the mix into a greased and baking paper lined square baking tin about 20x20cm. Bake in preheated oven for 35 minutes, or until cooked to your preference.

  6. Remove from oven and cool on wire rack. Top with additional mint. We topped ours with a little extra melted cooking chocolate and a few drops of mint extract, but this is optional.
