When you need an afternoon caffeine hit, it doesn’t get much better than these Pick Me Up Coffee Brownies. For those who aren’t big fans of the coffee flavour, it’s not overwhelming. In fact it really serves to make the flavour of the chocolate in the brownie much more pronounced. Of course if you’re a coffee lover, increase the coffee for a fuller flavour.
Method

Preheat oven to 190 degrees.

In a large bowl bring together the cocoa powder, sugars (reserve some icing sugar for dusting if you want), salt, flour, and espresso powder.

To this add in the milk, eggs, vegetable oil, vanilla and coffee. Stir until just combined, be careful not to over-mix.

Scoop this batter into a prepared square baking dish (grease it first and line with baking paper) around 20cm in size.

Bake for 40-45 minutes, or until cooked through. A toothpick inserted in the middle will be a little moist.

Remove from oven, sprinkle with icing sugar if desired. Allow to cool for at least 20 minutes before serving.
