Sometimes you get a sweet craving, and what you need is something simply delicious like this Chocolate Biscuit Slice. This is a super easy dessert that is guaranteed to make your afternoon tea just a little bit more enjoyable. Mixing super yummy coconut, chocolate and vanilla flavours, there’s so much to love.
Method

Prepare a slab pan that's about 15cm x 25cm and at least 3cm deep by lining it with baking paper. Leave an overhang so the slice is easy to remove later.

In a saucepan on medium-low heat, combine the butter, sugar, vanilla and cocoa powder. Cook, stirring now and then, for about 4 minutes or until butter has melted and mixture is combined. Set aside to cool.

Once cooled, add the beaten egg to the chocolate mixture and whisk to combine. Then replace saucepan over low heat and cook, constantly whisking, for 10 minutes or until the mixture is thick, glossy and smooth. Pour this into a large bowl.

To this bowl add your chopped biscuits and stir, then spoon into the prepared pan and smooth the surface flat. Cover and pop in the fridge to set for 2-3 hours.

Make the chocolate icing by mixing the sifted icing sugar and cocoa powder together in a bowl. Add the butter and milk, then stir until smooth. Once the slice has set, spread the icing over the top, and sprinkle with coconut if desired.
