Preheat your oven to 180C and prepare a square 20cm baking tray by laying it with baking paper and greasing the sides.

In a large bowl cream the butter and brown sugar until combined and smooth. Cream it for at least 2-3 minutes as this is what will create a really buttery caramel flavour in the blondies.

To the bowl add vanilla and egg and then mix again until combined. Gently sift in the flour and salt, and fold the mixture together, being careful not to over mix it.

Lastly throw in the chopped pecans and chocolate chips and gently fold in. Transfer the mixture to a baking tray and stud with the extra pecans. Then bake for 18-20 minutes, or until golden brown at the edge.
