How to Make Passionfruit Butter
Get ready to give your taste buds a treat with this delicious (and healthy) alternative to butter. Passionfruit butter is the perfect spread for biscuits, scones and it makes an excellent gift. Why not whip up a batch, add to various jars, tie with a bow and give this unique gift to friends and family this year.
Method

Whisk together the eggs and caster sugar in a microwave proof jug until well combined. Stir in the pulp of four passionfruit and the chopped butter.

Microwave uncovered at 30% for 7 - 10 minutes, whisking every minute until mixture is thick enough to coat the back of a wooden spoon.

Divide into hot sterlised jars. Seal and refrigerate. Makes 1.75 cups.

Wash in warm soapy water or put through the dishwasher, rinse in hot water. Place on baking tray and place in the oven at 120 degrees for 20 minutes.
