We’re always on the lookout for really good gluten-free recipes around here for our coeliac and gluten intolerant buddies, and it certainly doesn’t get much better than these Yummy Gluten Free Apple Cinnamon Muffins.
These muffins aren’t the sweetest out there, because we knew we were going to sprinkle a bit of cinnamon sugar over the top (yum!). If you find they aren’t sweet enough, you can add more honey. Alternatively, if you have a batch of them feel free to simply slather them with honey and butter!
Method

Preheat your oven to 180 degrees, and grease (very lightly) a 12-hole muffin pan or line with patty cups. You may not use all the holes, it will depend on how big you want the muffins to be.

Combine all of your dry ingredients (almond flour, tapioca flour, cinnamon, and baking soda) in a medium bowl.

In another bowl combine the wet ingredients. Whisk together the three eggs, honey, vanilla, coconut oil, coconut milk and lemon juice. Stir in the grated apple.

Add the wet and dry ingredients together, stirring well until properly combined.

Fill up the muffin pan with the batter. Feel free to fill quite high, leave just a small space at the top, as these muffins do not rise al that much.

Bake in the oven for between 25-30 minutes or until golden on the top.

These muffins aren't the most stable when hot, so let them cool for about 15-20 minutes before you remove them from the pan. If you want, you can sprinkle them with cinnamon sugar and then serve.
