Corned Beef Fritters are perfect for breakfasts, lunch and even a starter at a dinner party!

I remember my Mum used to always make Corned Beef Fritters the night after having a Corned Beef for dinner the night before.  And I loved Corned Beef Fritters so much!  In fact, even today I love Corned Beef Fritters cold – I think they are even better the next day!

If you are planning on cooking Corned Beef Fritters at home, always buy an extra-large Corned Beef (2kg plus) so you get a few meals out of them.  Have the corned beef for dinner then use the leftovers to make a massive amount of fritters the next day.  Serve on their own and a bit of tomato sauce!

How to Cook at Corned Beef Roast:

We highly recommend you cook Corned Beef in the slow cooker the day before.  We have the instructions here:  Slow Cooker Corned Beef.  You can add additional flavour to the corned beef by adding things like brown vinegar, brown sugar and star anise to the water.  Or another very popular method is adding a whole 1.5 litres of Ginger Ale instead of water in the slow cooker.

Method

  1. To a large bowl add the corned beef, corn kernels, eggs, veggies, parsley, spring onion grated cheese and season well.

  2. Add enough flour so that the mixture becomes gooey but stays together.

  3. Shallow fry the fritters on both sides until golden.

  4. Serve with tomato sauce and a salad if you want to be healthy!

Recipe Hints and Tips:

  • Corned Beef Fritters can be frozen.  Cool to room temperature and layer between sheets of baking paper and seal in an air tight container.  Can be frozen for up to three months.
