Zesty Cream Cheese Icing is the perfect icing for carrot cake. The flavours complement each other and it is just soo delicious!

Method

  1. Beat cream cheese, butter, lemon juice, lemon zest and vanilla together.

  2. Make sure it is smooth and fluffy.

  3. Add icing sugar in 2 additions and beat until creamy.

  4. Add more icing sugar or juice as needed to easily spread. Makes about 4 cups.
