Ingredients

  • 500 g Fresh Berries hulled and quartered (save some for decoration on top)
  • 1/4 cup Brown Sugar
  • 4 tsp White Sugar
  • 1 cup Reduced Fat Yoghurt
  • 1/4 cup Light Sour Cream
  • 1/4 tsp Orange Zest
  • 2 cups Toasted Muesli

This recipe for Berry Muesli Parfaits is a winner in my house because it can double as breakfast, a snack or dessert….

You can use any fruit in season that you like!

Omit the sugar if eating it for breakfast!

Method

  1. In a medium bowl combine the berries (save some aside for garnish), brown and white sugars.

  2. Mix well and stand until the sugars dissolve and the berries start to release their juices (about 20 minutes).

  3. In a small bowl combine the yoghurt, sour cream and orange zest.

  4. Spoon on third of the berry mixture into four parfait glasses, top each with two tablespoons of the yoghurt mixture, and the same with the toasted muesli.

  5. Keep layering until the glasses are full - end on a yoghurt topping.

  6. Decorate the tops with the remaining berries and serve immediately.

  7. Berry Muesli Parfaits are not suited for the freezer

  8. Can be made the day before, but are best eaten the day they are prepared
